Watergate Salad

 Memorial Day is next week and many of you may be with family at a picnic.  I love to bring food that is a bit different than the normal picnic salads.  This fun salad is a hit at all my family gatherings.  The addition of the colorful marshmallows makes this very pleasing to the eyes and taste buds.  Enjoy!!

Watergate Salad

INGREDIENTS:

1 can (20 oz.) crushed pineapple, in juice, (DO NOT DRAIN, YOU NEED JUICE ALSO)

1 package (3.4 oz.) pistachio flavor instant pudding

1 bag mini marshmallows (I use 10 oz. bag of funmallows, fruit flavored marshmallows. plain is also fine.)

1 tub cool whip, thawed (I use low fat or fat free 8 oz. container)

DIRECTIONS:

Mix first 3 ingredients in a large bowl until incorporated.

Mix in cool whip.

Leave in fridge for at least 1 hour, serve chilled
