Jalapeño Cheddar No-Knead Bread

This is definitely a easy recipe month.  If you visited me the last two weeks you know I’m on a No-Knead bread kick.  This bread is a great side for chili or soups.  Enjoy!!

Jalapeno Cheddar No-Knead Bread

Ingredients
  • 3 cups All Purpose Flour
  • 1½ tsp. salt
  • 1 tsp. yeast
  • 1½ cups luke-warm water
  • ¼ cup diced jalapeños, drained (or one fresh, diced)
  • 1 cup shredded cheddar cheese

Directions:

In a large bowl, Mix all ingredients into a ball.

Place plastic wrap over bowl. Let sit overnight.

 

In the morning grease a small fry pan.

Place the dough on a floured surface, make the dough into a ball and place in fry pan.

Let sit with a clean towel on top for 1 hour.

After the 1 hour, pre-heat the oven to 450 degrees.

Place an EMPTY Dutch oven with lid in oven for 30 minutes.

After 30 minutes take out Dutch oven, add dough and cook for 30 minutes

After the 30 minutes, remove Lid and cook an additional 3-5 minutes to get the top more crisp.

When done, remove from Dutch oven, slice enjoy!!

How to become a better coupon shopper

In my last post about cutting cable I explained how with no cable I tend to watch more YouTube videos.  I found it can be very helpful to watch these money saving channels.  After cutting cable I decided I wanted to minimize other things like other bills and clutter in my home.  I found it was hard to lower any other bills because I already was lowering my thermostat and turning off lights when not in the room and unplugging unused appliances.  The place that needed help was the grocery bill.

I found that to help with groceries I shop at Aldi and Wegmans.  I used the Wegmans app to make a list and I would find the item.  If it was cheaper at Aldi I would buy it there but if it was more expensive I would wait to get it from Wegmans.  This way of shopping saved me a lot of money I knew I was paying the lower price by doing this.  One problem with Aldi is that you can’t use coupons.  I was watching YouTube one day when One Cute Couponer came into my watch list.  She changed the game for me.  She is not the type that says free groceries, but in order to get it you have to jump on one food do a hand stand and copy your receipt to 12 separate other sites.  She is honest by saying you have to pay $10 out of pocket, but if you do that you get $12 back to use today in points.  That is an example of how she teaches you to shop at Walgreens.  With the help of her I average 50 cents a box of cereal now.  I get free toothpaste and low cost paper products, cleaners and detergent.

I tried her method of couponing at Dollar General and I bought $34.00 worth of food, cleaning supplies and fragrance sprays and I paid $13 out of pocket.  OCC teaches you how to use the digital coupons to make sure you are left with little worry about a transaction going right.  So if you need a lesson on couponing I highly suggest you start with Her.

No-Knead Rye Bread

Rye bread is my favorite flavor bread.  I love the fact that I can start the dough over night and bake this in no time the next day.  I have been experimenting with a few different flavors and can’t wait to share them with you

No-Knead Rye Bread

Ingredients:

MAKES ONE LARGE LOAF

  • 1 1/2 cups rye flour
  • 4 1/2 cups all-purpose flour
  • 2 2/3 cups cool water
  • 1 teaspoon active dry yeast
  • 2 1/2 teaspoons Kosher salt

Directions:

In a large bowl, Mix all ingredients into a ball.

Place plastic wrap over bowl. Let sit overnight.

 

In the morning grease a  fry pan.

Place the dough on a floured surface, make the dough into a ball and place in fry pan.

Let sit with a clean towel on top for 1 hour.

After the 1 hour, pre-heat the oven to 450 degrees.

Place an EMPTY Dutch oven with lid in oven for 30 minutes.

After 30 minutes take out Dutch oven, add dough and cook for 30 minutes

After the 30 minutes, remove Lid and cook an additional 3-5 minutes to get the top more crisp.

When done, remove from Dutch oven, slice enjoy!!

Tip: I use a 5qt Dutch oven

Six Months Without Cable

I can’t believe I don’t have cable.  I never thought I would be without the Hallmark channel.  I want to let you know how I did it.  First of all I went to Amazon and bought an antenna for my television to get local channels.  So far it works pretty good.  On maybe two occasions I had to readjust the antenna to get a clear picture, but for the most part it works great.  The second thing I have is Netflix.  I love binge watching The Office, Schitt’s Creek, Nailed It, Grace and Frankie along with may other shows.  I also have Disney+ and I purchased that at a yearly rate so it cost I believe just under $70.  That has a lot of great older movies, animal shows and of course The Mandalorian which is a favorite in my home.  Netflix keeps my occupied but I also watch a lot of YouTube on an app on my television.  I have been watch a lot of coupon videos lately.  I am telling you that if you want to learn to coupon the most upfront and honest person I found was OneCuteCouponer.  She is amazing and as saved me a few hundred dollars already.

Other ways I get to watch my favorite shows is by watching my DVD and Blu-Ray collection.  I find we are gifted or purchase these movies and they are rarely used.  By dusting off old movies you will most likely find you have a lot of shows to watch that will keep you busy for quite awhile.

So, After 6 months I don’t miss cable one bit.  I now enjoy a $110 extra dollars per month to spend on things I need or to put into savings for a rainy day.  If you are thinking of cutting the cord I hope these suggestions make your decision a bit easier.

Schitt’s Creek Final Season

If you haven’t heard about Schitt’s Creek yet, please get on Netflix NOW and start watching.  The characters are hilarious and loving in a way we haven’t seen before on television.  The all inclusive characters are a refreshing glance into a world filled with love and kindness.  I was hooked by this show by the first commercial trailer I saw for POP television.  The series is rapping up soon and I will definitely be sad to see it go.  A must watch show.

Orange Cranberry No-Knead Bread

Orange Cranberry NO-KNEAD BREAD

 

***you need to prepare the dough the day before you plan on eating it***

 

Ingredients:

 

3 cups bread flour, you may use all-purpose, but the bread flour makes the crust crisp.

1 teaspoon salt

¼ teaspoon instant yeast

12 ounces warm, but NOT HOT water

1/2 cup dried cranberries

zest of one orange

TOPPING:

butter, about one tablespoon

Sugar crystals, if you cant find these granulated sugar is fine

 

Directions:

 

In a large bowl, Mix all ingredients into a ball.

Place plastic wrap over bowl. Let sit overnight.

 

In the morning grease a small fry pan.

Place the dough on a floured surface, make the dough into a ball and place in fry pan.

Let sit with a clean towel on top for 1 hour.

After the 1 hour, pre-heat the oven to 450 degrees.

Place an EMPTY Dutch oven with lid in oven for 30 minutes.

After 30 minutes take out Dutch oven, add dough and cook for 30 minutes

After the 30 minutes, remove Lid and cook an additional 3-5 minutes to get the top more crisp.

melt butter in microwave now, about 30 seconds, set aside

When done, remove from Dutch oven, brush bread with melted butter and sprinkle sugar crystals on top.

Let cool, slice and enjoy!!

No-Knead Bread

I was searching the internet for an easy bread recipe when I came across the no-knead bread. There were a ton of recipes on line and I wanted to find the best one. I decided to go on YouTube to find a recipe that looked good, with step by step instructions. I found just the perfect place. http://www.youtube.com/watch?v=_1CKVcXe06A He gives step by step instructions that are very easy to understand. I highly recommend you check this recipe out.

 

This is the recipe that I use, but I do recommend that you watch the step by step video before you try this for a perfect bread!!!
