Chocolate Covered Popcorn


The kids are back in school and most of us are back to our regular routine.  One thing I’ve noticed is that its hard to get quality family time.  My family decided to enjoy Family Fun Night.  We do this every Friday by eating dinner together and playing a great game of Pictionary.  We have been doing this for about a year now and I really enjoy how much closer the family has become.  Its nice because while eating dinner we talk about the week and during the game we yell, scream and laugh and have a great time.

Looking for fun games that people of all ages can play?  We like Scattergories, the younger kids are allowed to just say the answers instead of writing them down.  Some kids may enjoy scribbling on the paper to feel they are playing with the big kids.  Other fun games are Clue, Go Fish, and Connect 4.  If your on a budget, games are usually on sales as door busters during Black Friday and you can even check garage sales or your local thrift store.  You could also ask family members if they have any games they are looking to get rid of.  Empty nesters may be looking to clean out the old play rooms.

No game night is complete without snacks.  Chocolate Covered Popcorn is so easy to make and it is delicious.  I hope you give this recipe a try and I hope you try a family fun night, its great for family bonding!!


You will need: 

2 bags popped microwave popcorn

1 bag milk chocolate baking chips


Pop the popcorn, 1 bag at a time, per directions, set aside to cool a bit.

In a medium size microwave glass bowl, add the baking chips, microwave 30 seconds, remove and stir.  Keep doing this every 30 seconds until it is melted. (it took 1 minute for me)

On a foil lined cookie sheet, place the popcorn on the cookie sheet, but be sure not to get any kernels.  Using a fork drizzle melted chocolate over the popcorn until it is all used.

Place in the fridge for ½ hour, check if the chocolate is hardened, if not leave in until it is.  Once it is hardened, break up and serve.


Homemade Pizza


Thursday Night is Pizza night in my house.  I have been making this recipe for years.  Its actually a very old recipe from Home Economics Class that we have had for years.  This recipe makes 2 large pizzas, so its nice for big families or parties.  You can be as adventurous or tame as you want with the toppings.  I have even used this recipe to make pizzas on the grill using a pizza stone.  Enjoy!!


3 1/2 – 4 cups bread flour, (you may use all-purpose, but bread flour gives a crispier crust, I prefer the bread flour)

1 teaspoon granulated sugar

1 envelope instant dry yeast

2 teaspoons salt

1 1/2 cup water, the water should be 110 degrees F

2 tablespoons olive oil


Jar pizza sauce.

16 oz.  Mozzarella cheese, shredded

optional, pepperoni, onions, peppers, or any other topping you like.


Combine 3 cups of the flour, sugar, yeast and salt in bowl of a stand mixer with hook attachment.

While the mixer is running on low speed, add water and oil, beat until dough forms a ball, add more flour as needed 1 tablespoon at a time.

Scrape the dough onto  lightly floured surface and gently knead until smooth.

grease a large bowl with oil or cooking spray, add the ball of dough.

Cover the bowl with a clean kitchen towel in a warm area for about 1 hour, or until the dough doubles in size.

Once it has risen, separate into 2 balls of dough, roll out on a floured surface and place on a well greased pizza pan.

I now use 1/2 can pizza sauce on each pizza, spread it with a spoon

now add 8 oz. cheese per pizza, spread evenly

Now is the time to add additional toppings.

Bake in a preheated 425 degree oven for 18-22

Buffalo Chicken Dip


This is an easy dish to prepare. If you microwave it, this makes a perfect dish to make in hot weather. Great for football games or family fun nights.


2 (8oz.) packages cream cheese, (I use low fat)

1 package taco cheese

2 tablespoons hot sauce

1 big can chicken, or 2 small, drained


In a medium bowl, add cream cheese and chicken, microwave 30 seconds

Add hot sauce and mix to combine.

In a 8X8 baking dish, spread cream cheese mixture.

Cover with taco cheese, as much as you like I use a bit over ½ bag.

Bake 350 until cheese melts, about 15-20 minutes, or microwave for about 2 ½- 3 minutes.

Serve with celery sticks and tortilla chips.
