Cookie Smores

I love smores, but sometimes I just want a cheaper way to make a few  I decided to try the Keebler Oops cookies that are fudge stripes but fully covered in chocolate.  The pack comes with 20 cookies so this makes 10 sandwiches. Super easy inexpensive twist on a classic.

Cookie Smores

1 package fudge stripe cookies, oops kind that are fully covered in chocolate

10 large marshmallows

place marshmallow on a skewer and brown over open flame, when marshmallow is crisp and brown, place on the cookie, add another on top and press down to make sure marshmallow spreads to entire width of cookie.

Scott and Marissa don’t trust anyone at the moment, but will this adventure bring them close or will the sins of the past tear them apart.

A great romantic suspense. This book kept me on my feet, a lot of twists and turns to make it interesting but the story line was explained at the end.  Another great read from this author.  I highly recommend.

M&M Blondies

There is something about Holiday color M&M’s that makes me happy.  I love all holidays and decorate and cook to coordinate.  There are so many new flavors and colors of M&M’s now it makes it fun to think up recipes.  I might have to add a semi-homemade Mint M&M brownie recipe.  Just thinking about the mint and chocolate has me wanting to run to the store and get the ingredients.  Hope you enjoy!!!


M&M Blondies


3/4 cup granulated sugar

3/4 cup packed light brown sugar

1 cup softened butter

1 teaspoon vanilla extract

1 large egg

2 1/4 cup all-purpose flour

1 teaspoon baking SODA

1 1/4 cup M&M’s divided

Heat oven to 375 degrees

In a large mixing bowl beat sugars, butter vanilla and egg.  I use my kitchen aid mixer a hand held on medium works too.  mix in flour baking soda until combined.  Now by hand add 1 cup M&M’s.

Press dough in a ungreased 9X13 pan

Add additional 1/4 cup M&M’s on top so every bar gets a nice amount of the candy.

Bake 15-20 minutes or until golden brown.

Cool in pan, slice & serve when cool.


BBQ Burgers

Grilling time is definitely here.  Burgers and hot dogs are always delicious, but this is a nice twist for when you want something a little different.  This makes enough sauce for a crowd but you can cut the recipe in half to feed less people.


Cooked hamburgers, as many as you need, sauce is good for about 12

2 cloves of garlic, chopped into small pieces

1 large onion, diced

1 tablespoon oil

1 cup ketchup

1 cup water

1/4 cup vinegar

1 teaspoon salt

dash of black pepper

2 teaspoons Worcestershire sauce


In a large sauce pan cook onion and garlic with the oil.  Cook until just tender.

Add remaining ingredients, except burgers.

cook about 30 minutes on simmer.

Add cooked burgers to the pot. Coat the burgers with sauce.



Italian Sausage Sandwich, Family size

We recently went to a restaurant and as an Appetizer we had Italian Sausage Bread. It was delicious and so simple but flavorful. We liked it so much I decided to replicate it at home. This feeds a family for dinner or makes a lot to use sliced as appetizers for a party. Enjoy!!


Italian Sausage Sandwich (Family Size)


16 oz. Mild  Italian Sausage

2 peppers sliced, I like to use red and yellow to add color

1 onion, sliced

Salt, pepper and garlic powder to taste

1 loaf fresh Italian Bread, Get a whole loaf not sliced at your bakery

4 slices Provolone cheese

1 can diced tomatoes, with juice



Cook Italian Sausage in about ½ cup water, cook until just done.

Remove sausage from Sauce pan, remove any liquid from the pan. .Add sausage back to pan, add peppers and onions. Cook 2-3 minutes until onions are translucent. Add diced tomatoes and seasonings.

Cook for about five minutes or until tomatoes cook down a bit and are fully warm.

Pre-heat over 350 degrees.

Slice bread in half.

Place a piece of aluminum foil on a cookie sheet, place bread on cookie sheet, Add sausage mix to bottom half, add cheese on top of the sausage mix.  Place op of bread on top of sandwich.

Place in oven 10-15 minutes until bread is crisp and cheese is melted.

Slice and eat. Enjoy!!!
