New Year’s Eve


Can you believe 2019 is over in a few hours?
I don’t know about you but 2019 kicked a lot of people in the butt. I my self am hoping for a wonderful, happy and healthy 2020. I wish the same for all of you.

Mexican Quiche


I have a last minute Holiday recipe for you.  This will use up biscuits and eggs and any veggie trays you could have.  Its a easy dish that makes 20 and a great hearty appetizer or a great breakfast for the new year.  Happy Holidays!!


2 cans refrigerator buttermilk biscuits, 7.5 OZ (10 COUNT)

1 cup shredded Monterey jack cheese,

9 eggs slightly beaten

1/3 cup milk, (skim)

½ cup chopped onion

½ cup chopped green or red pepper

1 teaspoon hot sauce

a dash of both salt and pepper

10 green olives halved



Preheat oven 375 degrees

Stretch biscuit a bit, and press into a greased muffin tin

Sprinkle cheese on bottom of biscuit

Mix rest of ingredients, except green olives, pour over biscuit, fill about half way, the egg will cover the bisquit.

Bake 25 minutes

Sprinkle more cheese, and add ½ olive on top.

Serve warm & Enjoy!!!


Where is Santa,Track him NOW!!


I have a few Christmas eve traditions.  One thing I like to do with my family is watch A Christmas Story while eating Chinese food. Another thing we enjoy doing is tracking Santa.  Every year NORAD had a Santa Tracker on their site so you can find out where Jolly St. Nick has been.  The Santa Tracker countdown has begun and in a matter of only a few hours we can see Santa’s progress.  I hope you visit the NORAD site and enjoy this tradition with your family this year.


Shirley Temple


I have a great family friendly recipe for a New Years Eve drink, the Shirley Temple.  This is a great drink for kids, non alcoholic drinkers or designated drivers.  you can buy cute pics and straws to make these even more fun.


You will need:


ginger ale

jar of maraschino cherries, you need the juice



Fill a glass with ice.

Add 1/8 cup of grenadine to the glass, top off with ginger ale.  Add cherries to the glass for added garnish.

Tips:  Can’t find Grenadine, cherry juice works in a pinch.  If you want your drink to have a deeper red color add cherry juice to the glass for a more festive look.




Maple Syrup Cream Cheese Pie


In New York, every year there is a Maple Festival where you can visit local Maple Syrup Shops and purchase Maple Syrup, Maple candies and all different Maple theme food and items.  This past year I purchased a Maple Cream Cheese Pie packet.  The directions were to add the package to cream cheese and add to a pie crust.  The package was $3 and worth it, but I wanted to have this more often and since its quite a hike to get to the gift shop I decided to try it myself.  I headed over to Pinterest and couldn’t find a recipe, so since December 17 is National Maple Syrup Day I decided to share my creation.

Maple Syrup cream Cheese Pie

1 graham cracker pie crust

2 (8 ounce) packages cream cheese, softened,  I use 1/3 fat free

4 tablespoons maple syrup

3/4 cup confectioner sugar


Mix softened cream cheese, sugar and syrup until smooth.

Add cream cheese mix to the pie crust.

Refrigerate at least two hours, slice enjoy.

for a more powerful maple syrup flavor, drizzle the slice with syrup before serving

Cream Cheese Coffee Cake


I can’t believe I haven’t posted this recipe on this site yet.  Its a Christmas morning tradition to eat this coffee cake while the kids are opening their gifts.  The cream cheese is a great added flavor and the top adds a nice texture.  I like this recipe because it is nut free for people that can’t eat them.  Happy Holidays!!

Cream Cheese Coffee Cake

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 egg
  • 1 cup sour cream, I use light
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder



  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 egg


  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 1/3 cup unsalted butter


Preheat oven to 350 degrees. spray a 9×13 baking dish with cooking spray

Beat 1 cup white sugar, 1/2 cup butter, and 1 egg in a large bowl until smooth. Add sour cream and vanilla extract, mix until combined. Stir in 3 cups flour, baking soda, and baking powder until mixture is combined, dough will be sticky at this point.

Spread half the dough evenly into baking dish.

In a clean separate beat all the filling ingredients together until smooth. Spread the cream cheese mix over the dough.   Drop remaining half of dough by spoonful’s over cream cheese mixture.

mix all topping ingredients with a pastry blender until its pea sized pieces.  sprinkle over dough.

Bake 45 minutes or when a toothpick comes out clean from middle of cake

Cool, slice and Enjoy!!
