CHICKEN AND AVACADO WRAP

I recently visited a LongHorn Steakhouse and bought a delicious chicken and avocado wrap.  This is my semi-copy cat version of the delicious sandwich.

CHICKEN AND AVACADO WRAP

Flat bread, I used 4 of the flat out brand, you could also use pita or Naan bread

1 large chicken breast, cut into pieces and cooked in 1 tablespoon oil

1 tomato sliced

1 avocado sliced

Ranch dressing, about 1 tablespoons per wrap

Colby jack cheese, about 1 tablespoon per wrap, cheese should be shredded

Lettuce, shredded, as much as you like per wrap

 

Cut the chicken breast into bitesize pieces, pan fry in 1 tablespoon oil until fully cooked and golden brown.

Heat your wrap by carefully flipping it on an open flame, you can also microwave or heat it on a grill pan if you feel more comfortable.

Add chicken to your wrap, top with lettuce, tomato, sliced avocado and shredded lettuce. Wrap the ingredients in flatbread.

It’s a cliché, but as I walk out of the ballroom the gala is being held in, I feel lighter, like a weight has been lifted from my shoulders. The sounds of the party quickly fade as I leave it and my family behind. I know this is a shitty way of doing things, but I couldn’t think of another way. Besides, it’s not like I had this planned. It’s not that I think they’ll be pissed; it’s the disappointment I know I’ll see in their eyes that stops me. I might be the strong, silent type, but I don’t know if I’m strong enough to withstand that. With all my shit packed, I quickly scribble a note.

I’m sorry I left this way, but it was the only way I thought I could. I don’t mean to upset anyone, but I can’t live like this anymore, it’s too much. Please let me go. I’ll be okay and get in touch when I’m ready. I’m sorry. I love you all, Mav.

I’m an hour outside Booker when the calls start. First Bria, then Reed and Jax. Just as I reach the New South Wales border, a final text message comes through, this one from Park.
Park: Do what you need to, be safe, we love you.
I turn off my phone and toss it onto the passenger seat. The road stretches out in front of me, and for the first time in a long time I feel like I can breathe.

Fried Croissant Dough

It’s fair time and what do you think of when you hear a fair is in town?  If your like me games, rides and FOOD!!  I love the fried dough and there is a place here that sells the best French fries.  The only problem with fair food is the cost.  After you pay for all the other things like parking, admission and games the price of food for a family really adds up.  My solution, make my own fried dough.  This is a quick and easy recipe, it might not be as good as the fair, but it comes pretty close at a budget price.  Enjoy!!!

 

Fried Croissant Dough

1 refrigerated can Croissant rolls

Oil for frying, I use canola

Powdered sugar for garnish

 

Open the can of rolls, cut them in 3-4 pieces

Heat oil to 350 degrees in a small frying pan

When oil is hot and ready add the dough about 2 at a time to pan, careful oil will be hot.

Flip them over until both sides are golden brown

When fully cooked, place the dough on a paper towel lined paper plate.

Sprinkle with powdered sugar.

My Favorite Scene to Write in Virtue and Honor

There are a lot of really good scenes in Virtue and Honor, so it’s hard to pin down just one.The prologue was written to be jarring to anyone who was vested in the series, and I relished in how much I was going to shake up everyone’s world. I was literally doing the evil cackle as I wrote that.

The opening scene at the strip club, that one was fun as well. The first sex scene in this one took several tries to get right, but I loved how it turned out. It’s sappy and romantic, which is generally not my style, but for these two, it was so perfect.

I also had so much fun writing interactions between Mason and Angela’s dad. Next to Cheryl, he’s the most sarcastic character in the bunch, and so very much fun to write.

However, if I’m forced to choose, and it looks like I am, my favorite scene is the one in the garage when Angela is running late and has to pick up her work badge from Mason.

Why?

It actually happened. It didn’t involve a vintage Trans Am, rather my Mazda 3, and a pack of hot dogs instead of a work badge.

My friend apologized all over herself, as she knows how I am about my car, but I was laughing so damn hard I was crying. She looked at me and said, “that has to go in your next book.”

My response: “Challenge accepted.”

It took a couple tried to get it right, as my first instinct was to have it happen with a different character. With a pack of hot dogs. However, as writing is a whole lot of trial and error, that didn’t feel right, so I scrapped it and tried again with different circumstances. Finally, success.

Lesson learned: never throw something to someone in a running car in the rain.

Tomatoes and Mozzarella

This recipe is for all the home gardeners looking for a way to use up all those fresh juicy tomatoes.  This is a favorite appetizer in my home and sometimes we actually eat this as a dinner on warm days when you just don’t want to cook.  If your lucky enough to live near a Aldi’s grocery store, you can purchase delicious fresh mozzarella at a great price.  Enjoy!!

Mozzarella And Tomatoes:

1 loaf sliced Italian bread

4 tomatoes, sliced

1 package fresh mozzarella

salt & pepper to taste

optional- basil, olive oil

Directions

Slice tomatoes and mozzarella, place on a platter alternating tomato & cheese, (see pic above) now sprinkle with salt & pepper.  If you choose you can also drizzle with olive oil and sprinkle fresh basil. Serve with Italian bread, toasted if you like or fresh.
