I love pork loin roast, but I wanted to spice mine up a bit. What better way to do that but use bacon and Coca-Cola. This is delicious and goes great with roasted green beans. Enjoy!!
Bacon Wrapped Coca-Cola Pork Loin
about 6-8 slices bacon, enough to wrap the pork loin
1/2 cup Coca-Cola
1/4 cup brown sugar
Wrap pork loin in bacon, place on a cookie sheet lined with aluminum foil.
mix cola and sugar in a bowl, brush over the pork loin.
bake 350 degrees and cook until meat thermometer reads 160° F. (medium)
let rest about 3 minutes, slice and serve.

Quesito Recipe, Puerto Rican Cheese Danish
Quesito’s can be found in neighborhood bakeries all over Puerto Rico.
You will need 1 package Pepperidge Farms Pastry Sheets, Make sure you get SHEETS, NOT puffs.
16 ounces cream cheese, fat free or full flavor is fine. I use fat free myself.
½ cup granulated sugar, can be adjusted up or down, per your taste.
1 teaspoon vanilla
You will also need,
Approx. ¼ cup light corn syrup
Colorful sugar crystals, if you don’t have, regular granulated sugar is fine, (for sprinkling)
Make sure you defrost pastry sheets before you prepare dish

I love making eggrolls because I can add or subtract ingredients that are used in the restaurants. I personally like mine to be veggie egg rolls and I like this recipe because its simple & most people have the ingredients on hand. Feel free to add ingredients like more veggies or even chicken. Enjoy!
Heat oil in large skillet over medium heat. Cook all ingredients except wrappers for a few minutes until the coleslaw is a bit soft but still has some bite to it. About 3 minutes. Remove from the heat and set aside.
Place about 3 tablespoons of the coleslaw mix in an egg roll wrapper. Add water to the edge of egg roll wrapper with your finger to seal and wrap the mix in the wrapper. Repeat with the remaining filling and egg roll wrappers. Heat the oil in a fry pan to 350 degrees. Fry each eggroll until golden brown on each side.
Serve with soy sauce or sweet and sour sauce.
