Halloween Cut-Out Cookies

Cut-Out cookies are a favorite for all holidays in my house.  I have a big assortment of cookie cutters that I bring out to coordinate with each holiday.  I found this to be a favorite recipe.  I think they taste good the same day, but day two these cookies shine.

CUT-OUT COOKIES

Makes about 2 dozen

2 cups all-purpose flour

1/2 teaspoon baking powder

1 stick unsalted butter, softened

1 cup granulated sugar

1 egg

2 tablespoons milk

1/2 teaspoon pure vanilla extract

DIRECTIONS

In a large mixing bowl cream sugar and butter, add egg and vanilla.

now add milk and mix to combine, finally add baking powder and flour mix to combine.

place dough in fridge for at least 1 hour.  its easier to roll out when dough hardens.  I sometimes make this the night before, for best results.

Pre Heat oven 350 degrees

Roll out dough with a rolling pin and cut with cookie cutter, place on a baking sheet with a sil pat.

bake 10 minutes or until just golden brown around edges

optional ice with your favorite royal frosting or frosting & add sprinkles.

 

I use this icing recipe:

½ cup confectioner sugar

½ tsp. almond extract, you could also use vanilla, but I like the almond taste better

1 TBSP. milk, I used skim, any is fine

Food coloring optional

 

Mix first 3 ingredients, If you choose add color, frost cookies with spoon, squeeze bottle, or drizzle.

Antipasto Salad

School has begun and its hard to find a good dinner idea that’s quick and easy with out turning on the oven, because its still a bit warm out.  I love to make this Antipasto salad because its filling with the meats and cheeses and if you still think you will feel hungry just add slices of fresh Italian bread to the side.

 

Antipasto Salad

1 head iceberg lettuce

red onion, sliced, use as much as you like

black olives, 1/2 can

green olives, 1/2 can

1 large tomato diced

4 slices ham, cut into bite size pieces

4 slices salami, cut into bite size pieces

2 slices provolone cheese, cut into bite size pieces

Italian dressing, I use about 3-4 tablespoons drizzled on top

Directions:

Cut ingredients per directions above.

cut the lettuce into bite size pieces, wash, pat dry and lay on a platter

add rest of ingredients, top with dressing.  serve immediately

 

Cinnamon Pie

I have been eating Cinnamon Pie for years.  I had a old recipe I found in a old church cookbook from the 50’s.  I decided to post this after watching a re-run of the show Psych when they go to a Cinnamon Festival.  This is a simple recipe with simple flavors.  I recommend eating with whipped cream or ice cream to amp up the flavor.  This pie isn’t for everyone because its more custard and less sweet, but if your looking for a more mild flavor pie, or tired of the same old pie, give this a try.

Cinnamon Pie

1 ready made pie crust

1 cup granulated sugar

1 1/2 table spoons all purpose flour

2 teaspoons ground cinnamon

2 large eggs

2 tablespoons melted butter

1 teaspoon vanilla extract

1 12 oz. can evaporated milk

Directions:

Preheat oven 400 degrees

in a large bowl combine sugar and melted butter, mix to combine, add eggs mix to combine

add flour, cinnamon and vanilla mix to combine.

finally whisk in the evaporated milk.

pour into pie crust.

bake pie for 15 minutes, after 15 minutes, turn oven to 350 degrees, tent a piece of foil over pie and cook for an additional 45 minutes, DO NOT LET FOIL TOUCH TOP OF PIE OR IT WILL STICK TO FOIL.

Cool and serve with whipped cream or vanilla ice cream

Chocolate Chip Cookie Pie

I have a long list of favorite recipes from my childhood.  One recipe I always loved was for Chocolate Chip Cookie Pie.  I love the milk chocolate chips in this recipe and this was always a great afternoon treat after school.  Add a dollop of whipped cream or ice cream to kick it up a notch.  Enjoy!!

Chocolate Chip Cookie Pie

1/2 cup granulated sugar

1/2 cup packed brown sugar

2 large eggs

1/2 cup all-purpose flour

2 sticks butter (1 cup) melted

1 cup milk chocolate morsels, plus a few to add to top for décor after baking

1- 9″ unbaked pie shell

Directions:

Preheat oven to 325 degrees

In a large bowl, beat eggs until foamy

Add flour, sugar and brown sugar, mix until combined

mix in melted butter, fold in chocolate morsels.

pour into pie shell.

bake for 45 minutes, after 45 minutes place a piece of foil to prevent crust from burning, cook for 15 more minutes.

remove from oven.  Serve warm with whipped cream or ice cream

Keeping his mind on the topic always took all of Alex’s effort anyway. When Charlotte sat hip-to-hip with him as she had today, he felt the heat of her skin, saw the long length of thigh exposed in front of him, heard her heavy post-run breathing until he was in sensory overload. She smelled so good, not stinky and sweaty like he must. She smelled classy and expensive with all those clean, floral scents. She smelled like a woman he could trust.
More like a woman I want to trust.
Thinking back, Alex recognized that she had been hiding something all along. When he wasn’t lost in a sensual fog, he was able to zero in on where the conversations lagged, when she got testy with his probing or tried to change the subject. It had something to do with her life in Boston before she moved to Chicago and it was something that had been going on for a while. She was practiced at her excuses by the time she used them on him. Alex stood dumbfounded a moment, watching her slow jog-walk toward the trail across the grassy lawns of Lincoln Park. She was heading directly toward their usual post-run Starbucks and if he didn’t get moving, she would be there first.
Still he stood, willing her to look back and flash him that smile that changed her whole face. She didn’t, of course, and Alex was left standing there, admiring her lithe figure and the smooth bunch and release of her muscles in those tiny running shorts as she moved into the distance. Reminding himself to close his gaping mouth, Alex jogged to the parking lot, trading an extra moment of admiring a beautiful woman for a few short moments admiring his beautiful new car.
Arriving at the coffee shop several minutes before Charlotte, Alex was forced to cool his heels. He spent the time piecing together anything he could think of to uncover Charlotte’s deep, dark, secret. Admittedly, he needed the ten-minute head start away from her to give his overheated blood a little cooling time too. He kept envisioning the two of them in that sweet ride, sitting close with their sweat-slicked bodies. The image had intensified the jolts of.electricity already coursing through his veins from running beside her scantily clothed body.
Too bad she turned me down. One of these days we will be in tight quarters, all alone, and I will make my move. I have resisted too long already.
Since the mention of her tight hamstring, all Alex could think about was massaging her leg, and moving up from there. Did the woman not understand what she was doing to him? After all, he was a healthy red-blooded man. How long was he supposed to watch her round little ass wiggle in front of him, or the glide of muscles in those incredible legs – or OMG – her breasts bob up and down in those little running tops. The woman was killing him. He wanted her so badly he could taste it.
He chided himself to stop thinking of her that way, as he always did when he lusted after her. He would catch himself wanting her and repress the overwhelming sexual response that had plagued him since the beginning. She was so much more than just beautiful and sexy. She was a brilliant woman, funny, witty, complex and delightful. She considered him a running partner, and a friend…
…but that body, oh, that body. Stop it!
Alex determined to stay focused on what she might be trying to cover up and got his desire under control. He reviewed the signs – when she changed topics or failed to make eye contact. He carefully dissected her words while he waited for her to arrive. He knew she was being intentionally elusive. Alex resolved again that today would be the day he found out what she was concealing, beginning as soon as she arrived.
Speaking of arriving, Charlotte should have shown up long before now. She would have, unless something had happened. How long had he been sitting, pondering? How much time had passed?
Heart racing like a freight train, Alex ran into the park. Unsure why, he was terrified of what he might find.

Cinnamon Quick Bread

My family loves cinnamon so this is a go to recipe in my house. I have been making this bread since I started cooking as a young girl.  Its so easy to make and goes great with an ice cold glass of milk.  So flavorful you can eat it plain but if you want to add butter I won’t stop you.

Cinnamon Quick Bread

First thing to do is add 1 tablespoon vinegar to a 1 cup measuring cup, fill the rest of cup with milk until you get a full 1 cup, set aside

1/2 cup butter, softened
1 cup granulated sugar
1 large egg
2 cups flour
1 teaspoon baking soda

For the topping you need

1/3 cup granulated Sugar

1 teaspoon cinnamon

Directions:

Be sure you made your buttermilk before starting any other steps.

In a large bowl add sugar and softened butter, cream together.

Add egg and mix to combine

Now add buttermilk and mix, batter will be lumpy now, that’s ok.

add flour and baking soda, mix with a wooden spoon to combine, do not over mix.

Now make your topping, by mixing 1/3 cup sugar and 1 teaspoon cinnamon in a bowl. set aside

Spray a loaf pan with cooking spray and add half batter to pan, now add just over half of topping to batter.

Add remaining batter to pan, then add remaining topping.

With a knife swirl the batter to mix the topping into the batter.

Hit the pan against your counter once to twice to get a even batter.

Bake at 350 degrees for 45-50 min. or until toothpick tester come clean.

Cool in pan before removing about 15 minutes or more.

While this bread is good right after it cools, I found it tastes better the day after you make it.  So if you can make it the night before I would suggest you try to hold back eating it.
