Chocolate Chip Cookies

Whenever I need one of my recipes I come to this blog and look up what I need.  I was shocked when I realized I never added my classic chocolate chip cookie recipe to the blog.  Well today I fix that error.  These are a great chewy cookie with just the perfect amount of crisp around the edges.  I put mine in a glass cookie jar and ate one the next day & I think it tasted even better.  These are a great cookie to try.

Chocolate Chip Cookies

1 cup (2 sticks) unsalted butter, softened

3/4 cup granulated Sugar

3/4 cup light brown sugar, firmly packed

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all purpose flour

3/4 teaspoon baking soda

1/2 teaspoon salt

1 package semi sweet chocolate morsels

Directions:

Preheat oven 350 degrees

beat butter and sugars in mixer until creamy

beat in eggs

add vanilla, mix well

add flour, baking soda, and salt mix until combined.

stir in morsels.

drop heaping teaspoons of dough onto ungreased cookie sheet about 2 inches apart.  Bake 12-15 minutes or until brown around edges, do not overbake.

cool on wire racks

TIPS: do not over bake these cookies for best results.

use a sil pat and you will find you have the perfect baked cookie.

 

Chicken & Broccoli

I love making Chicken and Broccoli because its a pretty fast meal and its delicious.  You can add other veggies too and make it even more filling.

Chicken & Broccoli

1 pound chicken, cut in bite size pieces

1 head broccoli, cut into bite size bites

1 teaspoon grated ginger

1teaspoon sesame oil

1 table spoon canola oil

1 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup soy sauce, I use low sodium

1 teaspoon corn starch

Rice for serving, follow directions per your bag

Directions

Start by making rice per directions

Slice all the vegetables and set aside

In a large fry pan add 1 teaspoon sesame oil and heat for about 1 minute, add chicken.  Cook until cooked through and browned.  Remove from pan & set aside.

In the same pan that is now empty add 1 tablespoon canola oil heat for about 1 minute and then add  broccoli.  Stir fry until they are heated through about 3-5 minutes.

Add ginger and stir.

add Salt pepper and garlic powder and add beef back to pan

in a small bowl add soy sauce and corn starch. whisk until combined.

Add liquid to the fry pan.

Mix to combine all ingredients, cook down until a thicker sauce forms.  Then its ready to enjoy

serve over rice.

Leftover Chicken Souvlaki Salad

Last week you were given the recipe for Chicken Souvlaki Sub. This week I will share how you will use the leftovers to make a Chicken Souvlaki Salad. I hate to waste food and this insures that you use up the leftovers and have a whole new meal.

 

Ingredients

cooked Greek marinated chicken, diced

lettuce, chopped

sliced tomato

sliced cucumber

Tzatziki Sauce

feta cheese

Greek dressing

add all ingredients Except Tzatziki to a salad bowl and mix add desired amount of dressing and add a dollop of Tzatziki Enjoy!!!

Chicken Souvlaki Sub

I was looking for something to buy at my pizzeria and I decided a sub was the way to go. I ended up with a cheese burger sub which was delicious, but I did notice they offered a Chicken Souvlaki Sub. I thought how easy that would be to replicate. I made it and it was absolutely delicious.  This recipe is meant to have leftovers for a salad the next day. You will definitely have leftover items and this assures it’s used up.

Chicken Souvlaki Sub

4 chicken breast

lettuce

onion

black olives

tomato

cucumber

Feta cheese

greek salad dressing, I use Ken’s

Tzatziki Sauce, this is sold at Wegmans in specialty cheese section

Directions

One hour before you plan to cook, cut the fat from the chicken breast and cut them each into three long pieces.

Place the chicken in a bowl and add 1/2 cup Greek dressing.  Mix well to coat and cover with plastic wrap and place in fridge.

When ready to cook prepare all your food.  Cut lettuce in strips, slice onion, tomato, cucumber, and set aside.

grill your chicken outside or in a grill pan on your stove top.  Cook until a meat thermometer reads 165 degrees

Grill the sub rolls as well a few minutes before the chicken is done

when food is cooked and roll is toasted place the sub roll on plate spread Tzatziki sauce over top and bottom of roll and add chicken to the bottom  now add your sliced veggies  and pour a bit of Greek dressing on the veggies in the sub.
