It’s that time again. Time to dust off the Cookie recipes and start baking. This recipe for cherry surprise cookies is my favorite. I have been making them for years and they’re a favorite of Santa’s. I know because not even a crumb is left on Christmas morning.
CHERRY SURPRISE COOKIES
INGREDIENTS:
2/3 cup butter flavor Crisco
¾ cup granulated sugar
1 egg
1 tablespoon milk
1 teaspoon vanilla
1 ¾ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
48 maraschino cherries, well drained on paper towels
DIPPING CHOCOLATE:
1 bag milk chocolate morsels
2 tablespoons butter flavor Crisco
DIRECTIONS:
Preheat oven 350 degrees
Drain cherries, set aside Cream Crisco, sugar, egg, milk and vanilla in a large bowl on medium speed of an electric mixer, until blended
Add baking powder, salt and baking soda, mix to combine.
Add flour a little at a time, mix until combined
Divide the dough into 48 equal pieces Press dough into a thin layer around a drained cherry, place on a baking pan, 2 inches apart
Bake 10 minutes, move to a cooling rack and cool completely
Place milk chocolate chips and 2 tablespoons Crisco in a microwave safe bowl, microwave 30 seconds, mix and do again as many times as needed at 30 seconds each time until the chocolate is melted and smooth.
Drop cookie, one at a time in chocolate, cover completely, use a fork for best results. Chill in refrigerator to set the chocolate.
