I was looking for a new chicken recipe and found a Kraft recipe but decided to tweak it for ingredients I had on hand. This tastes so good. I loved the flavors and I am definitely going to make this every week.
Chicken Broccoli and Brown Rice Recipe
1 pound boneless skinless chicken breast, cut into bite size pieces
1 large onion diced
canola oil, about 2 tablespoons
1 teaspoon pepper
1 teaspoon garlic powder
salt to taste
1 cup uncooked instant rice, I use brown rice
1/2 cup chive and onion cream cheese spread, I use Aldis brand
1 cup shredded cheddar cheese, seperated
1/2 cup parmesan cheese
1 (14.5 ounce) can chicken broth any kind but I use fat free sodium free
1 head of broccoli, about 3 cups broccoli cut in pieces
heat oil in large skillet, cook chicken until cooked through and it browns just a bit, add diced onions cook until translucent.
add pepper and spices, mix well
Add rice,parm cheese, and 1/2 cup of the cheddar cheese and cream cheese mix well.
stir in broth bring to a boil, stirring occasionally.
add broccoli, cover simmer about 15-20 minutes or until broccoli is tender and rice is cooked
add remaining cheese to top cook until cheese is melted on top, serve.
