Meat Free Meals: Pasta and Veggies

Lent is just around the corner and I often struggle to find something quick to eat.  This meal is easy to make and tastes great and very filling.  Enjoy!!


1/2 package pasta, cooked per box instructions

1 1/2 cups heavy whipping cream

4 ounces cheddar cheese, shredded

1 cup broccoli cut small

1 small onion diced

1 red pepper, diced

1/2 teaspoon garlic powder

1/4 -1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon sesame oil

1 tablespoon canola oil

1/4 cup parmesan cheese


Cook 1/2 pound pasta per directions

while pasta is cooking, dice onion and pepper, cut broccoli into bite size pieces

place veggies in a large skillet with the sesame and canola oil.  Fry up in the pan until the onions are translucent.

add heavy whipping cream, spices and cheese to the pan.  simmer until cheese is melted.

When pasta is done, drain and add to veggies.
