Onion Rings

I made Fried Green Tomatoes last September and I had left over batter.  I had onions and figured why not make onion rings.  These taste really good on tomatoes or onions.  Enjoy!!


Onion Rings

About 4 onions, cut into rings

1 cups flour
1/4 cup corn meal
1/2 tsp salt
½ tsp pepper
milk, start with about 1/4 cup, add more as needed to make a pancake like batter (I use skim milk)
dash of chili powder

You will also need vegetable oil for frying

In a medium size bowl, mix together flour, cornmeal, salt, pepper and chili powder. Add enough milk to create a thick batter. Try a few tablespoons at a time.
Heat oil in a large fry pan. enough to cover the rings when frying about an inch deep in the fry pan.
Dip onion rings in the batter, making sure it is covering the entire onion, Let any excess batter drip off.
Place onion ring in 350 degree oil, careful not to splatter oil. Brown on both sides.
Drain the finished onions on a paper towel lined plate.
