FRIED ZUCCHINI FRITTERS
2 cups shredded zucchini
¼ cup corn meal
¾ cup all-purpose flour
¼ teaspoon garlic powder
¼ teaspoon salt
1/8 teaspoon black pepper
Oil for frying, if you use a small fry pan like I did, you will use approx. 1 cup
Shred the zucchini, place in a large bowl
Add flour, cornmeal, salt, pepper, garlic powder and eggs, mix just until incorporated.
Heat oil to 350 degrees. When oil is hot, place about a tablespoon of mix in oil, carefully, but quickly spread the fritter in oil so it cooks evenly.
Cook until golden brown on both sides. Repeat until all the batter is gone.
Place cooked fritter on a paper towel lined plate to remove excess oil.
Sprinkle with a bit of salt after cooking if you like, this is optional.
Serve plain or with a dipping sauce of your choice.
