I love making pasta dishes in the summer because you don’t need to heat up a hot oven. This is a quick recipe and you don’t need too many ingredients. If you have a lot of tomatoes in your garden you can always make the sun dried tomatoes yourself and use them in this recipe.
CHICKEN AND SUN-DRIED TOMATO PASTA
Chicken (you can use rotisserie that you slice up with skin off, a box of ready-made cut chicken, 2 cooked boneless chicken breast.) (I usually use leftover chicken)
½ jar sun dried tomato that is packed in oil, chopped
Salt and pepper to taste
½ teaspoon garlic powder
1 pint heavy whipping cream
16 oz. pasta, cooked per directions
½ cup parmesan cheese
Dash of red pepper flakes
DIRECTIONS:
Cook pasta per directions.
While the pasta is cooking, in a large sauce pan combine whipping cream, sun dried tomatoes and garlic powder and chicken. Simmer the sauce, when warmed through add parmesan cheese and red pepper flakes. When noodles are done, drain and add them to the sauce. Mix to combine and serve.
