CREAMY GARLIC PESTO PASTA

Are you looking for a great recipe to spice up boring chicken?  This recipe is a great one to try.  Its creamy and fresh with the addition of tomatoes and very filling with the addition of the chicken and pasta.  A great recipe to add to your collection.

CREAMY GARLIC PESTO CHICKEN PASTA

 

INGREDIENTS:

 

3 chicken breasts

12 ounce pack shell noodles, or any shape you prefer

Dash of salt and pepper

1 teaspoon garlic from a jar, or you can use fresh

Italian seasoning, enough  to sprinkle on and coat the chicken, about 1 tablespoon

2 tablespoons oil

2 tablespoons butter

2 tablespoons flour

1 jar pesto, I used a 8.1 ounce jar of Classico traditional basil pesto

16 FL OZ, heavy whipping cream

1 small tomato diced, or about 6 grape tomatoes, cut in 4

¼ cup parmesan cheese

 

DIRECTIONS

Cook noodles per box directions, drain & set aside. Keep the noodles in a large stock pot.

Add 2 tablespoons oil to a fry pan, warm slightly.

Clean the chicken breasts of any fat, place on a plate, sprinkle both sides with Italian seasoning,

Pan fry the chicken until completely cooked through, about 10-15 minutes.

Remove cooked chicken, slice in bite sized pieces. Set aside.

In the same fry pan that you used for chicken, add 2 tablespoons butter, melt, now add 2 tablespoons flour, mix well

Wisk in heavy whipping cream, add jar pesto, add dash of salt and pepper.

Put pan on simmer, add parmesan cheese, mix well.

Add the pesto mix to stock pot with noodles also add chicken, mix to combine.

Serve in a bowl with tomatoes on top.
