Recipe: Chocolate Mint Cookies

Chocolate mint cookies

This is a great recipe for your Christmas cookie exchanges. The green mint chips make these very festive.  Santa will be thrilled to have a chewy mint cookie on his plate in any home.    These are easy to prepare and turn out yummy every time I have made them.  Enjoy!!

Chocolate Mint cookies


  • 2 cups all-purpose flour
  • 3/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1-1/4 cups (2-1/2 sticks) butter, softened
  • 2 cups granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 bag mint chips, I use Guittard Green Mint Baking Chips


Heat oven to 350°F.

Stir together flour, cocoa, baking soda, set aside.

Beat butter and sugar in large bowl with mixer until fluffy. Add eggs and vanilla; beat well. Gradually add flour mixture, beating well. Stir in mint chips. Drop by rounded teaspoons onto ungreased cookie sheet.

Bake 8 to 9 minutes. (Do not over bake) Cool slight, remove from cookie sheet to wire rack.
