Peanut Butter Blossoms

Peanut Butter Blossoms

Christmas is not complete until I have made Peanut Butter Blossoms.  These are a favorite in my house and among friends.  As you can see from the photo they make a great gift for neighbors, teachers, co-workers or anyone that is a fan of chocolate and peanut butter.  This recipe is pretty much a classic but the reason I enjoy this particular recipe is for the light chewy cookie consistency instead of a more crunchy cookie.  These are also great on their own as a peanut butter cookie, but like most things everything is better with chocolate.

Peanut Butter Blossoms

INGREDIENTS:

1/2 cup firmly packed brown sugar

1/2 cup granulated sugar

1/2 cup butter, softened

1/2 cup peanut butter

1 teaspoon vanilla extract

1 large egg

1 1/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 bag Hershey Kisses, unwrapped

DIRECTIONS:

Heat oven to 375°.
In large bowl, ( I use my Kitchen Aid mixer) combine sugars, butter, peanut butter, vanilla and egg, beat well.
Add flour, baking powder and baking soda, mix well. (if you are mixing by hand, add flour a bit at a time to make it easier to combine)Roll cookie dough into approx. 1 inch balls, or use a scoop to make them uniform, place on ungreased cookie sheet, (I put 12 cookie per sheet)  gently with the palm of your hand press the ball of dough down just a bit.

Bake cookies at 375 degrees for 8-10 minutes.

Remove cookies from sheet and transfer to a cooling rack.

place a chocolate in the middle for peanut butter blossom cookies,

As you can see by the picture, these make a great gift too.  I purchase clear treat bags from Dollar General and use a pretty ribbon to wrap my cookies and them pass them to friends and family.
Enjoy!!!
